01 - 16 ounces refrigerated cinnamon rolls with icing (two 8-ounce cans)
02 - 30 ounces sliced peaches in syrup, drained (two 15-ounce cans)
03 - 1/4 cup brown sugar, packed
04 - 1 teaspoon ground cinnamon
05 - 1/2 teaspoon vanilla extract
06 - 2 tablespoons unsalted butter, melted
→ Finishing & Garnish
07 - Icing from cinnamon roll package
08 - 1/2 cup chopped pecans (optional)
# Method:
01 - Preheat oven to 350°F. Lightly coat a 9x13-inch baking dish with non-stick spray.
02 - Cut each cinnamon roll into four pieces. Reserve the included icing for garnishing after baking.
03 - In a large mixing bowl, combine drained peach slices with brown sugar, ground cinnamon, and vanilla extract. Gently toss to coat peaches evenly.
04 - Arrange half of the cinnamon roll pieces evenly in the prepared baking dish. Spread half of the peach mixture over the rolls.
05 - Top with remaining cinnamon roll pieces, then the rest of the peaches. Evenly drizzle melted butter over the surface.
06 - Place dish in oven and bake for 35 to 40 minutes, or until cinnamon rolls are golden and fully cooked.
07 - Allow to cool for 10 minutes. Drizzle reserved icing over the casserole and sprinkle chopped pecans on top if using.
08 - Serve warm, plain or with a scoop of vanilla ice cream if desired.
