01 - 1 lb boneless, skinless chicken breasts or thighs

02 - 2 ripe peaches, peeled, pitted, and diced (or 1 cup canned peaches, drained and chopped)
03 - 1/2 cup barbecue sauce
04 - 2 tbsp honey
05 - 1 tbsp apple cider vinegar
06 - 1 tsp smoked paprika
07 - 1/2 tsp garlic powder
08 - 1/2 tsp salt
09 - 1/4 tsp ground black pepper

10 - 8 slider buns
11 - 1 cup coleslaw (optional, for topping)
12 - 1 tbsp butter (optional, for toasting buns)
# Method:
01 - Place chicken breasts or thighs in a medium saucepan and cover with water. Bring to a gentle simmer and poach for 15 to 18 minutes until cooked through. Remove from heat, drain, and shred with two forks.
02 - In a small saucepan over medium heat, combine peaches, barbecue sauce, honey, apple cider vinegar, smoked paprika, garlic powder, salt, and black pepper. Simmer for 10 minutes, stirring occasionally, until peaches soften.
03 - Puree the sauce using an immersion blender or potato masher until smooth or to desired texture.
04 - Add shredded chicken to the sauce, stirring to coat evenly. Cook together for 5 minutes over low heat to meld flavors.
05 - If desired, split slider buns and lightly butter cut sides. Toast on a skillet or griddle until golden brown.
06 - Divide honey peach BBQ chicken evenly among slider buns. Top with coleslaw if using.
07 - Serve sliders immediately while warm.
